Hello jam makers.

October so they can order and collect strawberries - that is tomorrow!
Our jam making session is on and we are looking forward to having some fun while adding delicious treats to our larders.
Thursday 5th October, 2.30pm at Jennifer's house 69 McCarthy Rd, Maleny is the venue and we ask that you bring along the following items:
- A large pot for making the jam ( such as a pasta pot)
- Glass jars with a screw on lids suitable for jam ( ie not too big) Approx 10 medium size jars should be enough.
- 1 kg bag white sugar ( if making recipe #1)
- Jar honey or maple syrup ( if making recipe #2)
- Chia
seeds ( if making recipe #2)
- 1 lemon or 1 lime
- Jamsetta (if making recipe #1 Woolworths or Coles approx $2.50 per pkt) https://fowlersvacola.com.au/shop/preserving-aids/jamsetta
- Apron to keep clean ( jam making can be messy!)
- Gloves for handling hot
jars
- Kitchen tongs for picking up hot jars
- Sharp kitchen knife for hulling the strawberries

Depending on which one you choose (or if you choose both ) please see quantities of the ingredients you will need
to bring along.
We have found a good source of strawberries suitable for jam making, and will pick these up Wednesday afternoon. The cost of the strawberries is $10 per person.

1: STRAWBERRY JAM WITH
SUGAR AND PECTIN
This recipe can use less sugar but you may need to add more pectin ( jamsetta). We test the jam while cooking to check when it is set sufficiently to bottle. If storing this jam for some time, out of the fridge,
canning is recommended. This involves putting the bottled jam jars into a large pot and boiling for another 15 mins. Jars are then removed and left to cool gently.
Suggest we double this recipe using 2 kilos of strawberries. (1lbs= 1 kilo) This will produce enough jars to make the
exercise worthwhile….and enough to share with others!
Recipe doubled
4 lbs (2 kilos or 14 cups) strawberries
3 cups sugar
2 tbps lemon juice
4 tbsp powdered pectin (2 pkts Fowlers Jamsetta) 50gms = 3.33 tablespoons
2: STRAWBERRY JAM THICKENED WITH CHIA SEEDS
The bottled jam in this recipe must be stored in the fridge - or frozen. It does not have a long shelf life, but who would want to? It is truly delicious! Not as sweet as traditional jams - yet so full of flavour. The chia seed is the thickener without flavour, adding texture and bulk.
NB: you can add sweetening via honey, maple syrup or sugar.

7 cups (1 kilo) strawberries (1 cup raw fruit = 0.15 kgs)
7 tablespoons chia seeds
3 tablespoons lemon juice
6-7 tablespoons honey or maple syrup (if needed)
